I've been cleaning up some old Outlook for Mac archives and needed a way to convert OLM files into formats that actually work with different apps. I ended up trying MacSonik OLM Converter, and it handled everything much better than I expected.
The biggest advantage for me was that it supports a lot of export formats. I converted a few mailboxes to PST for Outlook on Windows, a couple to PDF for documentation, and also created MBOX and EML backups. It even supports MSG, CSV, HTML, EMLX, and several other formats.
Another thing I appreciated was that it didn't just export emails. My contacts, calendars, notes, tasks, and journals were included, and the original folder structure stayed intact after conversion.
I also had a fairly large OLM file, but there weren't any file size restrictions, so the process completed without any issues.
