I had to do something similar recently. If it's just a few mailboxes, Google's native migration tools work fine, but for larger mailboxes or multiple users they can take quite a while, and it's worth doing a test migration first. Google also recommends completing the required prerequisites before starting any migration batch.
One thing that helped us was migrating the oldest mail first instead of the newest. That gives users immediate access to their recent emails while the older archive continues syncing in the background, making the transition feel much smoother.
If you need more control, we ended up using the BitRecover Office 365 Backup Tool to export Microsoft 365 mailboxes and then import the data into Google Workspace. It supports bulk mailbox export, incremental backups, and formats like PST and MBOX, which are useful if you want to keep a local archive as well.
Whatever method you choose, I'd recommend keeping the Microsoft 365 mailbox available for a few days after the switch. It makes it much easier to verify that everything expected has been transferred before decommissioning the old account.
