As Michael Grant mentioned in the comments, you can edit text by selecting the text and then tapping the “T” icon. Here is an FAQ article with more information: http://feedback.squidnotes.com/knowledgebase/articles/501213.

You can. Select the note and hit the T in the top of the window. You can do what you want to the typed note. Change the text, the color, the size, even delete it.
